"TURKEY MEATLOAF"


Whew! Busy day.
I had to prepare something really quick and easy, which could be eaten with either bread or rice ( depending on my husband's choice today, as I wouldn't be home for lunch).
I decided to make meatloaf with my Jenny-O "Extra Lean" Ground Turkey Meat here.
My meatloaf is a "meal-in-one"since it already has meat, veggies and oats! Believe me, it tastes good and is as moist as the usual meatloaf recipes using ground beef or pork.

For the toppings, the twist is that I add balsamic vinegar to give it that sweet and tangy finish.

Quick, easy, and delicious TURKEY MEATLOAF!

"TURKEY MEATLOAF"

What You Need:

  • 3/4 cup oats
  • 1/2 cup skim milk
  • 1 medium onion, minced
  • 2 pounds ground turkey (extra lean)
  • 1/2 cup chopped red bell pepper (optional)
  • 1/4 cup minced celery stalks (optional)
  • 2 eggs, beaten
  • 2 tsp Worcestershire sauce
  • 1/4 cup ketchup
  • 1 tsp dijon mustard
  • 1/2 tsp salt (or 1 tsp low sodium soy sauce)
  • 1/2 tsp ground black pepper

Ketchup toppings:


  • 3 tbsp ketchup
  • 2 tsp brown sugar (or 1 packet of splenda)
  • 1/2 tsp balsamic vinegar
  • 1/2 tsp Worcestershire sauce
How To:

-Preheat the oven to 350 degrees F.
-In a small bowl, stir together the oats and milk.

-In a large bowl combine the turkey, oat mixture, onion, bell pepper,celery, eggs, Worcestershire sauce, ketchup, mustard, salt (or soy sauce) and pepper. Mix just until well combined.
-Transfer to a loaf pan, and top with ketchup toppings mix.

-Cook for 1 hour in the preheated oven

-Let the meatloaf rest for at least 10 minutes before slicing and serving it.
