Chicken Afritada is a tasty dish that I recommend for people who do not enjoy eating raw tomatoes. You can still get the benefits from the vitamins and antioxidants (beta-carotene, lycopene, Vit A, C, potassium and more) from tomatoes in the form of the tomato sauce used in the afritada!
This is another meal-in-one dish I can recommend for kids especially, because it already has vegetables (the bell peppers, onions and garlic), potatoes and the chicken! The dish is very colorful as well, which makes it really interesting to serve on a plate, plus it is very tasty!

"CHICKEN AFRITADA"
What You Need:
- 2 lbs chicken, cut into serving sizes
- 4 pieces medium sized potatoes, peeled and quartered
- 1 red onion, diced
- 1 head garlic, minced
- 1 green bell pepper, cubed
- 1 red bell pepper, cubed
- 1 cup water (or chicken stock)
- 1 cup tomato sauce
- (optional) 2 tablespoons of patis - fish sauce
- 3 tablespoons of olive oil
- salt and pepper to taste
How To:
-In a cooking pot or wok, heat oil.
- Sauté garlic and onions
-Add chicken and cook it until slightly brown.
-Pour in the tomato sauce, patis and stock.
-Bring to a boil and allow to simmer for 20 minutes or until the chicken is almost cooked.
-Add potatoes and continue to cook for 15 minutes more or until the potatoes are cooked
-Add the green and red bell peppers, simmer for a couple more minutes
-Season with salt and black pepper
-Serve hot with a side of rice
